MIRACLE DOUGH CINNAMON BUN BREAD

This will take good care of a craving for ooey gooey Cinnamon Buns.  Super easy to make (easier than making cinnamon bun rolls) and ready in no time!  For me, this recipe is quite addictive!  The bread pieces are substantial and very filling.  One serving is probably going to be enough with a cup of tea or coffee.  I have made this recipe a few times already. 


The sweetener tables for all the most common scenarios are in my cookbooks for your convenience.  For example, ¾ cup sugar sweetness (not ¾ cup liquid) using my bottle of sucralose from the EZ-Sweetz brand (whether the smaller one of 0.5 oz or the bigger yellow bottle of 2 oz – Zero carbs) would be 18 or 36 drops respectively.  Here is an article and video about the sweeteners. Part 1.  There is another article and video here: Part 2.


2 cups grated Mozzarella cheese (500 ml)

2 oz cream cheese (60 g)

1 cup Gluten-Free Bake Mix 2, OR 1 1/4 cups Keto Bake

  Mix (250 mL), OR 1 cup almond flour PLUS 1 tbsp oat fiber (15 mL)

2 tbsp powdered sweetener of choice (30 mL)

1 tsp baking powder (5 mL)

1egg, fork beaten

Cinnamon Butter:

5 tbsp butter, softened (75 mL)

Liquid sweetener to equal 1/2 cup sugar (125 mL)

1 tbsp cinnamon (15 mL)

2 tsp honey substitute, OR molasses (10 mL)

11/2 tsp powdered sweetener, OR powdered maltitol (7 mL) 

 

Preheat the oven to 400°F (200 °C). 

In microwaveable bowl, nuke Mozzarella and cream cheese about 50 seconds, or until melted.  

In small bowl, combine Gluten-Free Bake Mix 2, powdered sweetener and baking powder. 

Top molten cheese with dry ingredients and egg.  Mix well with a fork or wooden spoon.  Place dough ball on greased cookie sheet and form a bread shape.  Cut deeply into the dough to make 8 slices of bread.  Top with one batch of Cinnamon Butter, concentrating on the deep slits only.  Set aside any excess cinnamon butter.  Bake bread 15 minutes or until golden brown on top.  Allow to cool 10 minutes and top with the second batch of Cinnamon Butter, plus any excess that was set aside, if desired. 

Cinnamon Butter (double recipe, if desired):  In two cereal bowls, combine butter, liquid sweetener, cinnamon, honey substitute, OR molasses and powdered sweetener, OR powdered maltitol.
