CHEWY NO-BAKE CHOCOLATE COOKIES

These are very tasty and at the same time just half a cookie gives one lots of energy for the entire morning!  At least that has been my experience.  You may need a little more but I am quite sensitive to stimulants, thus these are self-limiting for me and last a long time in the refrigerator or freezer.  


11/2 cups sugar-free chocolate chips (375 mL)

4 oz Baker’s unsweetened chocolate (125 g)

2 oz cocoa butter (60 g)

1 cup whey protein powder* (250 mL)

Blender Condensed Milk:

1/3 cup boiling water (75 mL)

4 tbsp unsalted butter (60 mL)

3/4 cup whole milk powder, OR (175 mL)

  cream powder

Liquid sweetener to equal 1 cup sugar (250 mL)

1/2 cup powdered erythritol (125 mL)

1 tsp vanilla extract (5 mL)

 

In double boiler or one pot placed over another with boiling water in it, place chocolate chips, unsweetened chocolate and cocoa butter.  Melt them completely and pour in the Condensed milk; stir to combine.  Add whey protein powder and stir to combine.  

Blender Condensed Milk:  In blender or food processor, combine boiling water, unsalted butter, whole milk powder, OR cream powder, liquid sweetener, powdered erythritol and vanilla extract; blend until smooth. 

Using a 2 tbsp (30 mL) cookie scoop, drop chocolate onto wax or parchment-lined cookie sheets.  If making 48 servings, drop by 1 tbsp (15 mL).  Place in refrigerator to harden.  Then remove and place in a container for the freezer.  Enjoy whenever there is a need for a pick-me-upper. 

Variation:  No-Bake Fudge-like Cookies:  Use 2 oz (60 g) Baker’s unsweetened chocolate and 4 oz (125 g) cocoa butter.  Keep in the refrigerator. 

Helpful Hints: *The whey protein powder that I used, you can buy at Walmart.  It is called Equate Whey Protein Supplement (vanilla flavor).  Do not buy a whey protein supplement that is solely made from whey protein concentrates.  It should also have a high percentage of whey protein isolates in order to have the correct texture and taste in confections.
