LOW-CARB PUMPKIN WAFFLES

These tasty waffles are so perfect for the season.  You can use the remainder of the can after making a pumpkin dessert that requires less than the amount in the can.  These waffles are wonderful spread with Cinnamon Butter - see post below!

 

2 cups Gluten-Free Bake Mix 2 (500 mL)

2 tsp baking powder (10 mL)

11/2 tsp cinnamon (7 mL)

1/2 tsp baking soda (2 mL)

1/4 tsp nutmeg (1 mL)

1/8 tsp allspice (0.5 mL)

1/8 tsp salt (0.5 mL)

4 eggs

3/4 cup canned pumpkin (175 mL)

1/2 cup low-carb milk, OR whipping cream (125 mL)

Liquid sweetener (sucralose or stevia) to equal 3/4 cup sugar (175 mL)

3 tbsp butter, melted (45 mL)

2 tsp olive oil (10 mL)

 

Plug waffle maker in to heat and brush forms with light olive oil. 

In large bowl, combine Gluten-Free Bake Mix 2, baking powder, cinnamon, baking soda, nutmeg, allspice and salt. 

In medium bowl, whisk eggs and stir in pumpkin, low-carb milk, OR whipping cream, liquid sweetener, butter and olive oil. Make a well in the dry ingredients and pour in the wet ingredients.  Mix well. 

Use 1/cup (75 mL) batter for each form.  Spread the batter evenly to cover the forms completely.  Close the lid of the waffle maker and set the timer for 4 minutes.  Check.  I actually found with my first ones I went a full 5 minutes.  Remove the waffles, brush forms with olive oil and repeat. 

Helpful Hints:  I usually pop my waffle in the pop-up toaster if I don’t eat it right away to get it crispy again. 

Yield:  9 waffles

Many uses for these wonderful butters: think of spreading muffins, pancakes, low-carb toast, crackers, etc. with this sweet butter, instead of fruit spread.  Yummy!  

Cinnamon Butter:
1/cup Healthy Butter (125 mL)
  (Note:  you can use regular, salted butter; just add more cream)
Liquid sweetener (sucralose or stevia) to equal 1/cup sugar (75 mL)
2 tbsp whipping cream (30 mL)
1 tbsp cinnamon (15 mL)

In food processor with sharp blade, process Healthy Butter, liquid sweetener, whipping cream and cinnamon until smooth.  Keep refrigerated. 

Yield:  1/cup (125 mL)
1 tsp (5 mL) per serving

Variations:  Apple Cinnamon Butter:  Use Da Vinci® Sugar Free Green Apple Syrup instead of whipping cream. (0.1 g Carbs)

Apple Butter:  Substitute 11/tbsp (22 mL) Da Vinci® Sugar Free Green Apple Syrup for whipping cream and omit cinnamon. (0.0 g Carbs)

Create-a-Flavor Sweet Butter:  Use 11/tbsp (22 mL) any flavor Da Vinci® Sugar Free Syrup. (0.0 g Carbs
