Ready to go in the oven and brushed with egg yolk.  This Miracle Dough has been a lifesaver when it comes to bread-like goodies.  It is a spin off of the Fat Head Dough (brilliant!).  I have had a lot of fun making all kinds of bread-like and dessert baking with this dough.  The Mozzarella takes the place of gluten and works fairly well actually. 


 It is not easy to make gluten-free breads; however, I will link below this recipe to one that I make in the microwave oven quite frequently and it has many variations of things you can do with it.  That bread did not take off in popularity but nevertheless I personally find it useful.  Another recipe is my Low-Carb Sandwich Thins which is very bread-like and doesn't rely on this Miracle Dough either.  However, as far as bread machine breads go, I've not seen anything out there that works well without gluten; however, if you can have gluten, this is a very popular bread of mine: Wholegrain Bread.

MOZZARELLA LOW-CARB DINNER ROLLS

These were lovely - quite bread-like. Lovely warm out of the oven - Yummy!! Great for dinner but also great buttered and spread with your favorite low-carb jam.  Day-old rolls can be reheated briefly in the microwave oven. The packaged grated Mozzarella cheese from Costco or PriceSmart in the tropics works best and will yield the correct number of rolls.  These are so fun to make!  Easy dough!










Ingredients:

13/4 cups grated Mozzarella cheese (425 mL)
3 oz cream cheese (180 g)
11/2 cups Gluten-Free Bake Mix 2, (375 mL)
   OR Grain-Free BakeMix, OR
   Keto Bake Mix, OR see below
2 tbsp coconut flour (30 mL)
2 tsp instant yeast (10 mL)
11/2 tsp baking powder (7 mL)
2 eggs, fork beaten
1 egg yolk


Instructions:

Preheat the oven to 400°F (200°C).

In microwaveable bowl, place Mozzarella cheese and cream cheese.  Nuke about 1 minute and 40 seconds and check as you don’t want the Mozzarella cheese to get hard, but you do want it molten. 

In another bowl, combine Gluten-Free Bake Mix 2, Grain-Free Bake Mix, OR Keto Bake Mix, OR alternative given in Helpful Hints, coconut flour, yeast and baking powder.

Add eggs on top of slightly cooled cheese mixture in a food processor; process.  Add the dry ingredients and process on low speed until a dough ball forms. You can also do it using a big mixing spoon to bring it all together into a nice dough if you do not have a food processor. Knead briefly (can place in plastic wrap if it is too sticky).  Using ice cream scoops of dough form round balls and place on cookie sheet lined with parchment paper (first spray cookie sheet with nonstick spray so that the paper lies flat). Brush rolls with egg yolk. Bake 10 to 12 minutes, or until dark golden brown underneath.

Helpful Hints:  For a Grain-Free version, use a bake mix made up of 2 cups (500 mL) almond flour and 2/3 cup (150 mL) coconut flour.  You generally need 3/4 cup (175 mL) per 1 cup (250 mL) of bake mix.  Leftover bake mix can be frozen and used to “bread” eggplant, other vegetables or fish or chicken.  The packaged Mozzarella cheese from Costco or PriceSmart in the tropics works best and will yield the correct number of rolls.

Yield:  11 dinner rolls
