CHEDDAR GREEN ONION AND BACON CHIPS








CHEDDAR GREEN ONION AND BACON CHIPS

These were very moreish; Crispy, lacey chips.  Each time I make them, they fly and none are left to store.  Great snack with a diet drink or low-carb beer.  If you do have any leftover, keep them in a sealed cookie tin at room temperature.  You can nuke them briefly if they become chewy or bake 5 minutes in a hot oven.

2 cups grated Cheddar cheese (500 mL)
1/3 cup finely chopped cooked bacon (75 mL)
1/4 cup finely chopped green onions (60 mL)
  
Preheat the oven to 375°F (190°C).  Grease a cookie sheet and line with parchment paper, so that it sticks nicely to the cookie sheet.

In medium bowl, combine Cheddar cheese, bacon and green onions.  Form tablespoons (15 mL) of the mixture in piles on the prepared cookie sheet.  Bake 14 to 15 minutes until edges turn golden brown.  Allow to cool on a wire rack. 

Helpful Hints:  Do not use packaged grated cheese as it does not melt properly or crisp up properly.  Use the kind of Cheddar cheese that comes in a block and grate it finely.
