CABBAGE, BACON AND ONION STIR FRY

This is a great way to prepare cabbage and hide a few more veggies in with the veggies, so to speak. Delicious!  What's more is I made this recipe very easy by adding all ingredients (except seasoning) at once to the pan.  At first it is a big mountain of veggies, but soon it cooks down quite nicely. Great for busy weeknights or anytime really.









Ingredients:

2 tbsp olive oil (30 mL)
8 cups chopped cabbage (2 L)
2 bell peppers, chopped
1 medium onion, chopped
6 slices bacon, cut into small pieces
Salt and pepper, to taste 


Instructions:

In large nonstick frying pan, in olive oil and over medium heat, add cabbage, bell peppers, onion and bacon.  Cook until all the vegetables are soft and the bacon is cooked (it will be more like cooked ham than crispy bacon).  If you would prefer crispy bacon, cook separately and add at the end of cooking!  While cooking everything, sprinkle with salt and pepper, to taste.
