CREAMY MANGO POPSICLES




CREAMY MANGO OR PEACH POPSICLES

Mango is perhaps not a fruit that one thinks one can eat on a low-carb diet.  However, so little is in each popsicle that the carbs are not too bad at all and even better with using peaches. These popsicles are so creamy delicious and not icy at all. Better than anything you could buy commercially.  

The sweetener tables for all the most common scenarios are in my cookbooks for your convenience.  For example, ¾ cup sugar sweetness (not ¾ cup liquid) using my bottle of sucralose from the EZ-Sweetz brand (whether the smaller one of 0.5 oz or the bigger yellow bottle of 2 oz – Zero carbs) would be 18 or 36 drops respectively.  Here is an article and video about the sweeteners. Part 1.  There is another article and video here: Part 2.



1 cup chopped, fresh mango, OR (250 mL)
  diced frozen mango, OR chopped, frozen peaches
3/4 cup heavy cream (175 mL)
Liquid sweetener to equal 3/4 cup  sugar, OR (175 mL)
  to taste
1 tsp lemon juice, optional (5 mL)
1/4 tsp mango, OR vanilla extract (1 mL)
  
In blender, combine mango, OR diced frozen mango or peaches, heavy cream, liquid sweetener, lemon juice, if using and mango or vanilla extract.  Blend on slow speed and then high speed until completely smooth.  Pour into 6 popsicle molds and freeze.

Yield:  6 popsicles
