CHEDDAR ROASTED CAULIFLOWER





CHEDDAR ROASTED CAULIFLOWER

Simple as can be but tasty as can be as well.  When time is a factor simple and quick rules...even in my house!  However, we also want to have a good result.  This is so good!! I can eat it all by itself before it even makes it to the table!

1 lb cauliflower florets (0.45 kg)
2 tbsp melted butter (30 mL)
2 tbsp light olive oil (30 mL)
3/tsp salt (3 mL)
1/tsp black, OR white pepper (0.5 mL)
1/cup grated Cheddar cheese (125 mL) 


Preheat the oven to 400°F (200°C). 

In medium bowl, place cauliflower florets.  In small bowl, combine melted butter, olive oil, salt and black, OR white pepper.  Pour over cauliflower and toss to combine well.  Spread out on cookie sheet.  Bake about 25 minutes until almost fully tender.  Flip pieces and move them closer together.  Sprinkle each piece with Cheddar cheese and bake another 8 minutes.
