FOR THE LOVE OF EGGPLANT!

It is no secret.  I love eggplant in all sorts of ways...stuffed, Eggplant Parmigiana, battered and fried, roasted, covered in cheese, Eggplant Bruschetta...you name it, I like it! Here are a few of the ways I enjoy eggplant. Typically, I like using Japanese eggplant, but sometimes I use the larger variety of eggplants as well.
