The bottom of the cupcake - the chips drop to the bottom making it seem as if there is a fudgy frosting surprise on the bottom of the cupcake as well as frosting on top!

SINGLE LADY CUPCAKE
A cupcake in a jiffy!  Sometimes one doesn’t want a dozen cupcakes sitting around to tempt one but the craving is strong and you can satisfy it quickly and relatively safely with this super easy recipe. I made one, frosted it and tasted it, liked it and made another and invited hubby to tea - okay coffee for him. LOL  We had a tea/coffee date which we often do on our mountain in the jungle and sometimes we have a Miller Lite date.  I don't like diet soda but I do like Miller Lite.  I like champagne but cannot stand wine.  It's funny when I go places, people usually offer me wine or a cocktail and are surprised when I ask for beer instead.  Haha!!  Why can't a lady enjoy a beer without seeming unlady-like?  Truth be known I hardly drank anything in Canada during those 30 years that we lived in the cold, white North, but I find nowadays the beer relaxes me better than anything else will.. 

3 tbsp Gluten-Free Bake Mix, (45 mL)
1/tsp baking powder (1 mL)
1/8  tsp salt (0.5 mL)
1 egg yolk
Liquid sucralose (or stevia) to equal 2 tbsp (30 mL)
  granular sweetener equivalent OR your sweetener
1 tbsp butter, melted (15 mL)
1 tbsp heavy cream (15 mL)
1 tbsp granulated erythritol , OR equiv. in sweetener packets (for coffee) (15 mL)
  OR xylitol
1/tsp vanilla extract (1 mL)
1 tbsp sugar-free chocolate chips, optional (15 mL)

In cereal bowl, combine Gluten-Free Bake Mix, OR Grain-Free Bake Mix, baking powder and salt.  In another cereal bowl, combine egg yolk, liquid sucralose, OR granular sweetener equivalent, butter, heavy cream, erythritol and vanilla extract.  Whisk with a fork to combine well.  Add dry ingredients and whisk well to combine.  Stir in chocolate chips.  Using a spatula, scrape into a greased ramekin and microwave on high power 1 minute.  Invert ramekin to remove cupcake.  Allow to cool 1 minute and frost with approximately one quarter to one sixth of the Better than Betty Frosting.  Serve immediately.

Helpful Hints:  If using the chocolate chips, they will sink to the bottom of the cupcake, which is almost like having a frosted bottom and top to the cupcake.    My microwave oven is 1200 Watts.  You may need to cook yours a little less or a little longer depending on the wattage of your microwave oven.
