This pretty side dish is a recipe that was contributed to my cookbook by an acquaintance. Double the recipe as there won’t be any leftovers!

Liquid sweetener (sucralose or stevia) to equal 1/3 cup sugar (75 mL)
1/4 cup cider vinegar (50 mL)
2 tbsp water (25 mL)
6 whole cloves allspice
1/4 tsp cinnamon (1 mL)
Pinch of salt
14 oz can sliced beets, drained (398 mL)

In glass bowl, combine liquid sweetener, cider vinegar, water, cloves allspice, cinnamon and salt. Microwave 2 min. on 70% power. Cool a few minutes and add drained beets. Refrigerate overnight. Pick out allspice cloves with a teaspoon.

Nutritional Analysis: 6 servings, 1 serving:
26.1 caloreis; 0.6 g protein; 0.0 g fat; 4.0 g carbs
