MOZZARELLA-STUFFED CASSEROLE MEAT LOAF




As you can see the preparation above is very quick and easy.  The oven does most of the work.  If you like spicier food, you may want to think of using Pepper Jack cheese.  It also melts easily due to its high moisture content.






MOZZARELLA-STUFFED CASSEROLE MEAT LOAF

My husband was very appreciative of this meat loaf.  The beauty of this one is that it is made in a casserole dish and is absolutely easy and a no-fuss way to make meat loaf.  The oven I used is not my normal oven.  It runs very hot, so this meat loaf browned more than I think it would in a normal oven.

2 lbs ground beef (0.9 kg)
3 slices bacon, cut in pieces with scissors
1/cup chopped green onions (60 mL)
2 eggs
11/2  tsp salt (7 mL)
1 tsp crushed garlic (5 mL)
1/tsp black pepper (2 mL)
21/cups grated Mozzarella cheese, (625 mL)
  divided

Preheat the oven to 375°F (190°C)

In large bowl, combine ground beef, finely-cut bacon and green onions.  In small bowl beat eggs, salt, garlic and black pepper together with a fork until well combined.  Add to ground beef and mix well.  Turn out half the meat mixture into a 1-qt (1 L) casserole dish.  Cover with 2 cups (500 mL) grated Mozzarella cheese.  Cover with remaining meat and 1/2 cup (125 mL) grated Mozzarella cheese, OR more, to taste.  Bake 35 to 40 minutes on the lower shelf of the oven.
