TUNA ZUCCHINI FRITTERS

These were unusually good.  I think the Swiss cheese really made these!  A great use of zucchini to make these delicious snackables!  Keep them in the refrigerator for high-protein snack.  I like them with a bit of mayonnaise or plain and cold out of the refrigerator.

3 tbsp bacon fat, divided (45 mL)
1/cup chopped onion (125 mL)
21/cups grated zucchini (625 mL)
2 cups grated Swiss cheese, OR any cheese is fine (500 mL)
2, 6-oz cans tuna (170 g each)
1/cup minced fresh parsley (75 mL)
2 tbsp coconut flour (30 mL)
3 eggs
1/tsp salt (1 mL)
1/tsp black pepper (1 mL)

In nonstick frying pan in 1 tbsp (15 mL) bacon fat, over medium heat, fry onion until turning brown.  Place in large bowl.  Squeeze as much liquid out of the zucchini as possible (I just grab handfuls and squeeze real hard).  Place in large bowl along with onion, tuna, Swiss cheese, parsley and coconut flour.  In small bowl, beat eggs with fork and add salt and black pepper.  Stir into tuna and vegetable mixture.  Form patties and fry in bacon fat over medium heat, about 2 minutes, flip and continue flipping for the next 3 to 4 minutes until they are golden brown on both sides.
