This is more of an idea of what to do with the English Muffins (CLICK here). Serve them as Pizza Muffins! Except for the pizza sauce, most of the toppings don't have many carbs! My hubby really enjoyed this lunch. It made a good change of pace. The toppings I used were leftover chicken, cooked peppers and leftover tomato paste, that I had with lots of melted cheese. You can doctor the tomato paste to be a little sweeter, little thinner in texture (add water or vinegar)...and there you go!
