What a marvelous interview with Jimmy Moore, Jennifer, especially after the dog incident that terrified you just moments before. It's so nice to hear a voice to associate with our conversations. And what a marvelous low-carb and gluten-free spokesman and publisher Ian is! Ian made me LOL several times throughout his comments, but the account of the Egyptian mummy evidence about wheat being damaging to teeth and human systems was great. I follow the Egyptian research TV programs and knew that, but he relayed that in a charming convincing way.

His analogy of the low-carb community, though mature now, being "backed up against a wall surrounded by enemies that want to kill just like the Israelis surrounded by enemies all sides" wins the prize for me. I laughed so hard at that point in the interview. What a gem of a husband and publisher you have there! You both did a marvelous job of conveying both the importance of low-carbing and avoiding wheat and at the same time, effectively revealed why this cookbook is truly unique from all those that preceded it.
