ZUCCHINI SAUTE
This is a tasty, simple veggie dish using up some of the abundant zucchini from the garden.
2 tbsp olive oil (25 mL)
2 cups sliced onion (500 mL)

small zucchini, unpeeled and cubed, or
cut into little wedges
1/2 tsp salt (2
mL)
1/4 tsp black
pepper (1 mL)
1/4 tsp garlic powder (1 mL)
In large saucepan, in olive oil, cook onion until
tender. Add zucchini, salt, pepper and
garlic powder. Saute until zucchini is
heated through and tender crisp.
Yield: 8 servings: 52.0 calories; 1.4 g protein; 3.1 g fat; 3.9 g carbs
Variation: Saute
onions and 1 cup (250 mL) sliced, raw mushrooms together. (4.3 g Carbs)

Super simple - but I love sauted zucchini!
Zucchini is one of the most versatile veggies out there. Sometimes I just want to eat it by itself, call it a craving for something pure and healthy. This dish fits that craving perfectly-thanks for sharing.
